Easy-Peasy Delicious Tortilla Soup

We know... IT'S COLD OUTSIDE!!! How about warming those houses and belly's with something delicious and giving your kitchen an excuse to use it. Don't worry! This list of ingredients isn't going to break the bank or cause a hefty list of "to do's" while making it. This is our "go-to" for cold weather and filling our homes with happiness. Trust me. You won't be disappointed! Let's get to cooking!

Ingredients

1lb of chicken breasts

1 medium onion (sliced) 

2 gloves of garlic

1 15 ounce can of beef or chicken broth

1 cup of water

1 15 ounce can of corn (undrained)

1 15 ounce can of diced tomatoes and green chiles (undrained) 

If you don't want a little spicy kick, don't add the chilies.

1 11 ounce can of black beans

1 11 ounce can of enchilada sauce

1 packet of taco seasoning

1/2 teaspoon of chili powder

1 teaspoon of cumin

salt and pepper to taste

shredded cheese for topping

sour cream for topping

crunchy tortilla chip strips for topping


Let's do it!

1. Place the cleaned chicken breasts in the bottom of a 5 quart crock pot.

2. Season the chicken with salt and pepper.

3. Add in the diced tomatoes and minced garlic. 

4. Then pour in the broth, water, corn, diced tomatoes and enchilada sauce. 

5. Sprinkle with taco seasoning and chili powder and stir baby, stir!

6. Place that lid on the crockpot on low and cook for 8-10 hours. 

7. About 15 minutes before you are ready to serve, take the chicken breast out and shred them up using two forks. The chicken will shred very easily! 

8. Then put the shredded chicken back in the crockpot and stir.

9. Let the soup cook for about another 15 minute, then serve!

10. Make sure to top your soup with shredded cheese, a scoop of sour cream and tortilla chips and add cilantro to make it pretty!
